巧克力意大利芝士馅薄饼 Chocolate Pancake with Mascarpone
份量: 可做10~12件
材料:INGREDIENTS
面粉 100克 100g flour
可可粉 25克 25g cocoa powder
糖 2汤匙 2 tbsp. sugar
盐 少许 a pinch of salt
鲜奶 1杯 1 cup of milk
鸡蛋 2只 2 eggs
蛋黄 1只 1 egg yolk
牛油 25克(坐熔) 25g butter, melted
意大利芝士馅料:Mascarpone Filling
意大利奶油芝士 500克 500g Mascarpone cheese
糖霜 100克 100g icing sugar
香草香油 1/2茶匙 1/2 tsp. vanilla extract
巧克力碎 50克 50g chopped chocolate
做法:METHOD
1 面粉、可可粉、盐及糖筛匀于碗中。
Sift flour, cocoa powder, salt and sugar in a mixing bowl.
2 鲜奶加蛋及蛋黄打匀后,徐徐拌入面粉中搅至滑身,待30分钟,拌入牛油液,用平底锅煎成薄饼,备用。
Mix milk, eggs and egg yolk together, and slowly stir into dry ingredients until smooth, rest for 30 minutes. Stir in the melted butter and cook the mixture into pancake.
3 奶油芝士拌糖霜,香油及巧克力碎拌匀。
Mix Mascarpone cheese, icing sugar, chopped chocolate and vanilla extract together.
4 把适量馅料放入薄饼内折成1/4块,吃时配上热巧克力汁,便成。
Place the filling in the middle of the crepes then fold in quarters, serve with hot chocolate sauce.
厨房小备忘:
1 烹调前,薄饼浆必须准备好。
The pancake batter must be well rested before cooking.
2 煎成的薄饼应用烘饼纸分隔,以免黏在一起。
The finished pancake are best to separate by parchment paper to prevent sticking.
